With Greece being in the Mediterranean their cooking techniques tend to be very traditional. Greek cuisine is fairly similar to Turkish food some of the main products used in Greek cooking are:
- Aubergines
- Tomatoes
- Onions
- Green beans
- Honey
- Feta cheese
They have specific dishes that are used for certain occasions such as Koulourakia which means “Kings cake” and is eaten traditionally around New Years. There are many dishes in Greek cooking that are based on religious ways of cooking called Ottoman cuisine, these dishes are used for events such as Ramadan.
There are certain dishes that Islam’s have before dawn in the Ramadan period such as Sohoor or Sehri that are incorporated into some Greek foods.
Although these dishes may not be as popular or well known as one of the countries most well known kebabs. There are many variations on kebabs now, the most popular for Greece is the Shish kebab, one widely used around the world is a beef Shish kebab this is made using the following process:
- Make sure you have all the correct equipment before starting you will need 2lbs of beef either sirloin or tenderloin, half cup of olive oil, half a teaspoon of cumin, a teaspoon of white vinegar, half teaspoon of coriander and a teaspoon of diced garlic. Once you have all the correct ingredients then you can start the process.
- To start you need to prepare the meat you do that by dicing the beef into squares. Then you will need to put all the ingredients into a bowl this means the vinegar, coriander, garlic, cumin and olive oil, once mixed thoroughly pour into a plastic food bag. Then place the diced beef into the food bag with the mixture, seal the bag and shake so all the meat is completely covered, leave this then over night in the fridge.
- When it comes to the time you want to cook the meat drain the mix out of the bag leaving the meat behind, prepare the metal skewers by putting a light layer of oil on them. You simply then have to skewer the meat on.
- Then cook under your grill for about 5 minutes on each side turning to ensure all sides and the centre is cooked properly.
- You can then serve with either rice or salad and pita bread.
There are so many dishes within Greek cooking that it’s possible for any one to find a specific meal they like, it has plenty of meals for those that prefer milder dishes but also has some spicy dishes.
